I will offer 3 weeks worth of health and wellness tips to take to prepare for spring. We will talk about a variety of topics- from benefits of water..... to exercise.... to food journaling.... to how to stay motivated.

JK Challenge Countdown!


The JK Challenge starts on MONDAY! Join in on the fun. I will spend the last 3 weeks leading up to the first day of spring March 20th talking about healthy steps you can take to feel good. Want to lose a couple pounds? Want to increase your water intake? Want to lift your mood? Want to learn how to eat healthy on the go? You set your own goal and I will help you by talking about many different steps you can take to improve your mental and physical well being and therefore achieve your goal.

This will be your own goal- but I will be here to support you!

Are you up for the challenge? I'm so excited many of you have reached out and said YES already! I feel so blessed to have such amazing friends in my life- you mean the world to me! Let's do this together!

Foodie Friday: White Chocolate Chip and Oatmeal Cookies

Looking to make a sweet treat for your Valentine? Why not try this! A twist on an old classic. You get tartness from the raisins, and sweet from the White Chocolate Chips. This recipe will yield about 3 to 4 dozen cookies, depending on the size.
1/2 pound of Butter (use butter not Margarine, its the holidays)
1 cup Brown Sugar
1/2 cup Granulated Sugar
2 large Eggs
1 tsp of Vanilla
1/1/2 cups of All Pourpose Flour
1 tsp Baking Soda
1 tsp Cinnamon
1/2 tsp Salt (I use Kosher)
3 cups of Old Fashioned Rolled Oats
1 cup Raisins
1 cup White Chocolate Chips

Preheat oven to 350 dregrees
Mix the butter and both sugars togeter until light and fluffy.
Add eggs and vanilla, mix until loose.
In a seperate bowl add flour, baking soda, cinnimon and salt and mix or sift well.
Add to egg and sugar mixture, mix until smooth.
Add oats and mix until incorporated.
Remove from mixer and fold in raisins and white chocolate chips by hand. (This will prevent the raisins from getting all mashed up and the chips will keep thier shape)
You can drop onto a baking sheet pan with a spoon or I use a small ice cream scoop (about 1.5 ounces) to form the cookies.
Bake until the edges just turn light brown, about 10 minutes.
Cool on a cooling rack and enjoy with a cold glass of milk or hot coffee.

We Need To Workout Our Brains

This story may be beneficial to you if you find yourself trying to remember a word or fact that you really do know- but can't seem to come up with it quick enough. Apparently our cognative brain performance peaks in our early 40s! EARLY 40s!?!?!

Seeing as we are living longer and longer- we may want to start a workout plan for our brains! The top piece of advice seems a little counter active. We should rest our brains. The article says we should apply the "Five by Five".  Take 5 breaks in a day for 5 minutes a piece. It says "When we let our brain work behind the scenes, we have our best "aha" moments. And don't we all want more of those?"
